本标准适用于食品中丙烯酷胶含量的测定。
本标准方法检出限为7g/峙。
2 原理丙烯酷胶(acrylamide)系极性小分子化合物。
食品中丙烯酷胶经水、醇类等极性溶剂提取，离心过滤和过柱等净化处理，澳化衍生生成2，3-二澳丙烯酷胶(2，3-DBPA)，气相色谱-质谱联机分析，图谱参见附录A。
主要特征定性离子碎片(m/z):152、150、108、106，其相对丰度比:150: 152= 1, 108: 106= 1, 108 : 152=0.6 , 106 : 150=0. 6(各丰度比与标准品相比最大相差20%)。
定量离子(m/z):15定。
