Fats are solid at room temperature, oils areliquid 1; 2 .Figure 1 shows trends in the consumption of dietaryfats, indicating the proportion of margarine, ediblefats and oil 3. In 2006 the annual per capit

25、a con-sumption of dietary fats in Germany was approx.27 kg. Of this, margarine accounted for approx.3,9 kg and edible fats and oils, excluding lard, baconfat, suet and butter (calculated as pure fat), 12 kg.Along with carbohydrates and proteins, oils and fatsform the essential building blocks of all

Gemeinsam ist bei-den lediglich das lige Flieverhalten.Die Saatenverarbeitung hat in Deutschland neben derGewinnung von rohem Pflanzenl eine weitere Be-de

28、utung: die Versorgung des deutschen und europi-schen Markts mit proteinreichem Schrot fr Futter-mittel. In den letzten Jahren ist auch ihre technischeNutzung in der Oleochemie, als Pflanzenlkraftstoffoder als Rohstoff fr die Biodieselherstellung, vonzunehmender Bedeutung.Die Betriebe arbeiten normal

29、e Auslastung voraus-gesetzt im vollkontinuierlichen Dauerbetrieb. Sai-sonale Einflsse ergeben sich aus dem schwankendenMarktangebot an lsaaten und der Erlssituation frl und Schrot.Nur wenige Betriebe verarbeiten berwiegend nureine Saatensorte. In der Praxis werden mehrere derwesentlichen Sorten (Rap

30、s, Sonnenblumen, Soja,Lein) in den Fabrikationsanlagen verarbeitet. 2007wurden in Deutschland insgesamt 11 Mio. Tonnenlsaaten verarbeitet. Der Anteil von Soja und Rapsbetrug zusammen rund 90 %; der Rapsanteil ist mitca. 60 % etwas hher durch die technische Nutzungdes Rapsls vor allem zur Biodieselpr

31、oduktion. Ko-pra und Rizinus werden aus technischen und gegebe-nenfalls lebensmittelrechtlichen Grnden in eigenenAnlagen verarbeitet.Fr Deutschland ist die Situation der Betreiber vonAnlagen zur Gewinnung pflanzlicher le und Fettein Bezug auf Anzahl der Anlagen, Beschftigte undProduktion in Tabelle

The chemical structure of vegetable oils iscompletely different to that of mineral oils. They areglycerol esters of fatty acids, whilst mineral oils areessentially hydrocar

The only feature they havein common is their viscous flow behaviour.In Germany, oilseeds are processed not only to re-cover crude vegetable oil but also to produce proteinrich meal as animal feed for the German and Euro-pean markets. In recent years there has been growinginterest in the use of

34、 oilseeds in oleochemical appli-cations, for example as vegetable oil fuel or the rawmaterial for biodiesel production.At normal capacity, processing plants are in continu-ous operation. The fluctuating supply of oilseed andthe profit situation for oil and meal give rise to sea-sonal variations.Very

35、 few factories process only one type of seed; inreality manufacturing plants tend to process severalof the key varieties (oilseed rape, sunflower, soya andlinseed). In 2007 a total of 11 million tonnes ofoilseed was processed in Germany. Soya and oilseedrape accounted for around 90 %; the proportion

36、 ofrape, at approx. 60 %, is slightly higher due to its useprimarily in biodiesel production. Copra and castorbeans are processed in separate factories for technicalreasons and partly also to comply with food safetyregulations.Table 1 provides an overview of the situation inGermany regarding the veg
