    9、nsils.3.1.1.1 DiscussionThe machines shall be capable of re-moving physical soil from properly racked and prescrappeditems, and sanitizing multiple-use eating and drinking utensils.The dishwashing machine and conveyor-table, when as-sembled, shall form an oval-shaped dish handling system. Themachine

    10、s shall automatically convey racks of soiled dishesthrough the treatment stages of the machine, conveying themout to the clean dish removal area of the conveyor. Classification4.1 GeneralDishwashin

Materials6.1 All materials shall be specified as follows:6.1.1 Materials used shall be free from

    26、defects that wouldaffect the performance or maintainability of individual compo-nents of the overall assembly. The dishwashing machines shallmeet the material design and construction requirements ofNSF/ANSI 3.6.1.2 Corrosion-Resistant SteelCorrosion-resistant steelshall conform to the requirements o

    27、f any 200, 300, or 400series stainless steel.6.1.3 Corrosion-Resisting MaterialCorrosion-resistingmaterial is material other than corrosion-resistant steel that isequivalent in the dishwasher application.6.1.4 Nickel-Copper AlloyNickel-copper alloy shall con-form to the requirements of Specification

    28、 B127.6.1.5 PlasticsAll plastic materials and components usedin the dishwashing rinse system shall conform to NSF/ANSI 14or NSF/ANSI 51.7. Construction Requirements7.1 The dishwashing machine shall be complete so thatwhen connected to the specified source of power, water supply,heating means (steam

    29、or electric) and drainage, detergent andrinse agent feeder as applicable, the unit can be used for itsintended function. Dishwashers shall be quiet in operation, freefrom objectionable splashing of water to the outside of themachine. The machine shall be equipped with splash curtainsto prevent exces

    30、sive splash and spray carryover. Parts requiringadjustment or service, or both, shall be readily accessible fromthe front and side of the machine. The machine shall washdishes by means of a water and detergent solution pumpedfrom a tank and shall pump rinse the dishes under pumppressure prior to the

    31、 final rinse of fresh water from an outsidesource. Provisions shall be made to fill the wash and rinse tankeither directly from the regular hot water supply with a handvalve or through the booster or solenoid, or both, provided thewater temperatures comply with the provisions of NSF/ANSI3. The dishw

    32、ashing machine shall have a conveyor for han-dling 19-34 by 19-34 in. (501.6 by 501.6 mm) (nominal) racks,or equivalent meeting capacity requirement. The conveyorshall be protected by an adjustable slip clutch or other device.Means shall be provided for releasing or disconnecting thedrive power, or

    33、the drive in case of jamming. The conveyorshall be driven by a separate motor. The final rinse sprayF1237 092control shall have a positive return to the OFF position whenthere are no racks in process to ensure the conservation of finalrinse water. The machine shall be provided with tracks ofcorrosio

    34、n-resistant steel or other corrosion-resisting materialnot less than 0.070 in. (1.78 mm) or equivalent die formed, notless than 0.059 in. (1.5 mm) thick. Dishwashers shall have aninside working height of not less than 17.5 in. (444.5 mm)above the track.7.2 ConveyorThe conveyor shall be of heavy-duty

    35、 con-struction, and of suitable corrosion-resisting material. It shallbe designed to convey racks conforming to Specification F861through the dishwasher automatically.7.2.1 Conveyor Clutch SystemAn automatic trouble freeclutch system, springloaded, or adjustable slip clutch, and ofthe automatic re-e

    36、ngaging type, shall be furnished to shut downthe conveyor in case of a jam or other mechanical malfunc-tion(s).7.2.2 Conveyor Table(s)The conveyor table shall be con-structed of not less than 0.070 in. thick (1.78 mm) corrosion-resistant steel or other corrosion-resisting material. The legsshall be

    37、preassembled with suitable cross bracing and shall befurnished with NSF certified adjustable feet. The table shallinclude a mechanical conveyor system designed to continu-ously transfer dishes or racks at the rate of 6 to 8 ft/min (1.8 to2.4 m/min). The conveyor tables shall be furnished in thearran

    38、gement selected (see 4.5). The conveyor table shall besectioned for shipment.7.3 Piping, Tubing, Fittings, and Valves (Installation)Connections shall be readily accessible to facilitate installationand maintenance. Piping, tubing, and valves shall be located,when ever possible, on the exterior of th

    39、e machine.7.3.1 Piping and FittingsWater, steam piping, and fittingsshall be of corrosion-resisting material. Fresh water supply tothe tank shall be discharged not lower than 2 in. (50.8 mm)above the maximum flood level rim, or an effective air gap orvacuum breaker shall be installed to prevent back

    40、flow. Back-flow protection shall be in accordance with ASSE No. 1004.The drain and other plumbing connections shall be standardpipe or tubing connections. Drainage piping shall be corrosion-resisting material, or suitable heat-resisting plastic tubing withfittings. Drains may be joined into a single

    41、 trunk line requiringonly one connection or arranged to permit individual connec-tions to the waste line.7.3.2 ValvesWhen specified, steam valves shall be ofcorrosion-resisting material designed for steam applicationsand for a saturated steam working pressure of 50 psi (345 kPa).When specified, a se

    42、parately packed service supply valve shallbe provided for closing the supply of water to the dishwasher.The drain valve shall be permanently marked to show open andclosed position and shall be lever-operated or wheel-operated,ruggedly designed for foot or hand operation except whendrain valve closur

    43、e is automatic. Fresh-water rinse valves shallbe reliable and fully automatic and suitable for 210F (98.9C)water. The manually operated valves, when used, shall beidentified.7.4 Spray AssembliesAll spray nozzles and spray armmanifolds shall be corrosion-resisting materials. All sprayassemblies shall

    44、 be removable without the use of tools andshall be easy to clean. Final sanitizing rinse spray assemblies,components, or both shall be removable for deliming, descal-ing, and similar maintenance.7.5 TankThe tank shall be constructed of not less than0.048 in. (1.219 mm) thick corrosion-resistant stee

    45、l, Type 302in accordance with Specification A167.7.6 OverflowThe dishwasher shall have a readily acces-sible overflow drain in the tank. The overflow unit, or cover,when provided, shall be readily removable for cleaning.7.7 Scrap Trays (Strainers)Scrap trays of corrosion-resistant steel, not less th

    46、an 0.048 in. (1.219 mm) thick inaccordance with Specification A167 shall be provided toprevent insoluble matter and large pieces of food residue frompassing into the tank. The ledges on which the scrap trays restshall be so designed that surfaces beneath the ledge are easilyaccessible for cleaning w

    47、hen the trays are removed. Anyopening around or between scrap trays shall be held to aminimum, and as close as practical to the size of the scrap trayopening.7.8 Access Door(s)Access door(s) shall be provided forease of machine clean-out. The door(s) shall be constructed ofnot less than 0.048 in. (1

    48、.219 mm) thick, corrosion-resistantsteel in accordance with Specification A167, and shall be rigidand stiffened as necessary. Door safety catches shall beprovided for maximum operator safety on sliding doors. Doorsshall be splash-proof and their exposed edges shall be smoothand formed to prevent can

    49、ting or warping. One door assemblyshall be furnished for each tank. A common door may befurnished for adjacent tanks, if such door is of sufficient widthto provide the required access. Doors shall be provided with aninterlock mechanism to prevent the spray of wash or rinsewater when the door is opened.7.9 Legs (Feet)The machine shall be rigidly constructedand have four or more legs (feet) made of corrosion-resistantsteel, or other corrosion-resisting material. Legs shall beadjustable, so that the height of the track may be varied from34
