    4、dard and intended to cook with oil to a depth greater than0.5 inches (13 mm) or be intended for operation with not more than 5.3 quarts (5 liters) of cooking oilduring normal operation shall be subjected to the additional requirements for Deep Fryers/CookerFryers/Large Item Deep Fryers/Large Item Co

    5、oker Fryers/Oil Fondues specified in this Standard.5.1.3.1 LARGE ITEM - As applied to a Deep Fryer or Cooker/Fryer it describes an appliance intended forcooking an individual food item weighing 4 lbs (1.81 kg) or more expected to cause a large volumedisplacement of cooking oil.8 Assembly8.5 Unless d

    6、etermined to be acceptable for the purpose, fastening of the handle assembly of a deep fryer,cooker/fryer, large item deep fryer, large item cooker/fryer, or any fondue appliance shall not rely oncement or equivalent materials alone. Mechanical means, such as pressure clamping, bosses and lances,and

    7、 the like, shall be provided.8.6 A handle assembly that is utilized to lift and tilt a deep fryer, cooker/fryer, large item deep fryer, largeitem cooker/fryer, or oil fondue appliance shall comply with the requirements in 8.7 - 8.10, Table 31.1, andSections 40 and 41.8.7 A nonmetallic handle or feet

    8、 of a deep fryer, cooker/fryer, large item deep fryer, large itemcooker/fryer, or oil fondue appliance shall be identified as required by the Standard for Polymeric Materials- Short Term Property Evaluations, UL 746A.8.8 A handle of a deep fryer, cooker/fryer, large item deep fryer, large item cooke

    9、r/fryer, or oil fondueappliance shall be fastened so that a positive stop, interference screw or rivet, or other arrangement isprovided so that with minor loosening, disengagement of the handle from the vessel does not result.8.9 Iron and steel parts of a handle assembly of a deep fryer, cooker/frye

    11、CTION ORDISTRIBUTION WITHOUT PERMISSION FROM UL8.10 A handle of a deep fryer, cooker/fryer, large item deep fryer, large item cooker/fryer, or any fondueappliance secured by a single fastening means shall be prevented from rotating by means other thanfriction. A lockwasher alone is not acceptable.8.

    12、11 The feet of a deep fryer, cooker/fryer, large item deep fryer, large item cooker/fryer, or oil fondueappliance shall comply with Deep Fryer, Cooker/Fryer, Large Item Deep Fryer, Large Item Cooker/Fryer,and Fondue Cycling Test, Section 40.10 Supply Connections10.1.2 A deep fryer, cooker/fryer, lar

    13、ge item deep fryer, large item cooker/fryer, and oil fondue applianceshall be provided with a detachable power-supply cord having a cord length a minimum of 2 ft (0.6 m) anda maximum of 3 ft (0.9 m) long.22 Overheating Protection22.1 The requirements in 22.2 - 22.5 apply to cooker/fryers, deep fryer

    14、s, large item deep fryer, large itemcooker/fryer, and oil fondue appliances that do not employ probe-type temperature controls or anappliance provided with an enclosure complying with 7.5. These requirements are in addition to or modifythe applicable requirements in Section 16, Thermal Cutoffs; Sect

    15、ion 21, Spacings; and Section 46,Abnormal Operation Test.24 Protection Against Personal Injury24.4.1 The construction of a large item deep fryer or large item cooker/fryer appliance, including thearrangement of feet, shall not extend beyond the edge of a countertop. Compliance is determined by theOp

    16、erational Tests, Section 28.24.6.1 Food basket handles of large item deep fryer and large item cooker/fryer appliances shall preventthe basket from freely swinging/twisting during loading and unloading of the fryer.24.8 Operation of a large item deep fryer or large item cooker/fryer shall not necess

    17、itate that the highestpoint of the gripping surface of the basket or other mechanism used to manipulate or remove the food loadto exceed a vertical height of 60 inches (152 cm) from the floor. Compliance shall be determined by theOperational Tests, Section 28.24.9 Food intended to be cooked by a lar

    18、ge item deep fryer or large item cooker/fryer based onmanufacturers instruction manual in combination with any basket or accessory shall not be in excess of15 lb (6.8 kg) per 28.4.PERFORMANCE28 Operational Tests28.3 A large item deep fryer or large item cooker/fryer, shall comply with 24.4.1 and 24.

    19、9 with theappliance placed on a representative kitchen counter as shown in Figure 28.1 and constructed as follows:a) The vertical walls are to meet at a right angle; andb) The base cabinet shall have dimensions of not less than 36 inches (914 mm) from floor andno greater than 23 inches (58.4 cm mm)

    25、st in UL 498 or UL 817 (although it must comply with all other applicablerequirements in UL 498 or UL 817) provided that it complies with 30.2 and 30.3.30.2 Each of six representative detachable power-supply cords employing a magnetic appliance couplerused in deep fryers, cooker/fryers, large item d

    26、eep fryer, large item cooker/fryer, and oil fondue appliancesis to be placed in a full-draft circulating-air oven for 24 hours at 10C (18F) higher than the maximumtemperature on the magnetic appliance coupler, as measured under normal operating conditions, but notFigure 28.1Representative Kitchen Co

    29、pplianceor in the instruction manual for each representative food load of 31.2.2.1.2. The fryer is to be preheatedin accordance with 31.1.18 and loaded as indicated in the manufacturers instruction manual, see31.2.2.1.2. See 31.1.5 for the cooking surface temperature test.31.2.2.1.2 The food load(s)

    30、 used during the test described in 31.2.2.1.1 are to be fresh and cooked inaccordance with the manufacturers instruction manual. The number and type of food(s) shall be thosewhich represent the longest duration of operation with controls set to the maximum operating temperaturesetting. Testing in ac

    31、cordance with 31.2.2.1 fulfills this requirement if it represents the longest duration ofoperation.37 Stability Test37.1 A deep fryer, cooker/fryer, large item deep fryer or large item cooker/fryer, or oil fondue, applianceshall be placed on a plane inclined at an angle of 30 degrees to the horizont

    32、al. All other types ofappliances shall be placed on a plane inclined at an angle of 15 degrees to the horizontal. The applianceshall be positioned and loaded with whatever combination of separable components, liquid, or other media(material) that results in the maximum tendency to overturn under con

    33、ditions of intended use. Large itemdeep fryer or large item cooker/fryer shall be tested with a food and liquid load, with the level of liquid perthe manufacturers instructions for the particular food load tested. The appliance shall be prevented fromsliding on the inclined surface. As a result of t

    34、his test, the appliance shall not tip-over and shall not spillany of the liquid.Exception: A sandwich maker, waffle maker, contact grill, or the like shall be placed on a plane inclinedat an angle of 10 degrees to the horizontal with its lid open and at an angle of 15 degrees to the horizontalwith i

    35、ts lid closed.38 Dynamic Stability Test - Deep Fryers, Cooker/Fryers, Large Item Deep Fryer, Large ItemCooker/Fryer, and Oil Fondues38.1 When a deep fryer, cooker/fryer, large item deep fryer, large item cooker/fryer, or oil fondueappliance is subject to the Dynamic Stability Test described in this

    36、Section, the minimum tip-over angleAlpha 2 (2) shall be more than 30 degrees and the calculated velocity to cause tip-over shall be morethan 2 ft/s (0.61 m/s).38.2 With the deep fryer, cooker/fryer, large item deep fryer, large item cooker/fryer, or oil fondueappliance, initially on a level surface,

    37、 it is to be energized. While heated, it is to be filled to therecommended level with a commercially available vegetable shortening. After the shortening liquefies, thedeep fryer is then to be allowed to cool until the vegetable shortening solidifies.38.3 The deep fryer, cooker/fryer, large item dee

    38、p fryer, large item cooker/fryer, or oil fondue appliance isthen to be placed against a low stop on an adjustable inclined plane. By repeating this process with the deep fryer,cooker/fryer, large item deep fryer, large item cooker/fryer, or oil fondue appliance rotated in var

    40、iouspositions against the low stop, the position that is least stable is to be determined. This minimum angle tocause tipover is to be recorded as Alpha 1 (1). See A of Figure 38.1.38.4 The deep fryer, cooker/fryer, large item deep fryer, large item cooker/fryer, or oil fondue appliance isto be rota

    41、ted 180 degrees on the inclined plane and the angle increased until the deep fryer, cooker/fryer,large item deep fryer, large item cooker/fryer, or oil fondue appliance becomes unstable and begins totip-over. This angle is to be recorded as Beta 1 (1). See B of Figure 38.1.38.5 The deep fryer, cooke

    42、r/fryer, large item deep fryer, large item cooker/fryer, or oil fondue appliance isto be again heated while on a level surface until the shortening liquefies.38.6 While energized, the deep fryer, cooker/fryer, large item deep fryer, large item cooker/fryer, or oilfondue appliance is to be oriented o

    43、n the inclined plane against the low stop in the same position as usedfor the measurement of Alpha 1.38.7 The angle of the inclined plane is to be gradually increased (allowing the liquefied vegetableshortening to displace) until instability occurs or the oil starts to spill out. The deep fryer, coo

    44、ker/fryer, largeitem deep fryer, large item cooker/fryer, or oil fondue appliance is to be deenergized and held at that angleuntil the vegetable shortening again solidifies. This angle is recorded as Alpha 2 (2). See C of Figure38.1.38.8 With the vegetable shortening still solidified, the deep fryer

    45、, cooker/fryer, large item deep fryer, largeitem cooker/fryer, or oil fondue appliance is to be rotated 180 degrees against the low stop, the angleincreased until the unit becomes unstable, and then the tip-over angle measured.     46、fter Dynamic Stability Test39.1 A deep fryer, cooker/fryer, large item deep fryer, large item cooker/fryer or oil fondue appliance shallnot tip over when subject to a 0.75 ft-lbf ( 1.02 Nm) impact as described in 39.2.39.2 A deep fryer, cooker/fryer, large item deep fryer, large item cooker/fryer, o

    47、r oil fondue appliance is tobe subjected to an impact of 0.75 ft-lbf (1.02 Nm). The unit shall be placed on a horizontal softwoodsurface rigidly fixed for the intended use.
